Homemade Chicken Vegetable Soup Mix recipe for Food Storage!


Well here we go! Now that I have a stock of dehydrated veggies I can share with you a EASY and quick recipe using these little beauties Ive been drying all week! Keep in mind you can add whatever dehydrated vegetables you may have , as for me I like variety so ill be using these ingredients as well adding a few more!
As you can see from my photos I have zucchini, porta bella mushrooms, grated carrot, dried tomatoes and cabbage. Not pictured is the dried onion and garlic I will also be adding.

 My soup mix will feed a family of four . You will want to adjust your portions for the size of your family.

                                                          Chicken Vegetable and Rice soup

In a large size food storage bag put the following ingredients:

1/2 cup uncooked instant rice
1/4 cup   dried shredded carrots
1/4 cup dried zucchini
1/4 cup dried mushrooms
1/4 cup dried cabbage
1/4 cup dried tomatoes
1 TBS dried onion
1/2 teas  dried chopped garlic

In a small separate bag put your spices. This way if its kept apart there is less of a chance for spoilage ( Bullion cubes can turn rancid if not fresh and sealed properly)

Place 4 large chicken bullion cubes (keep in their wrappers until you use them) along with 2 Tablespoons dried parsley, 1/4 teaspoon black pepper. I wouldn't add any salt until after you've made your soup and then you can salt to taste. Bullion cubes hold a high salt content and you really don't want to over do it!
Seal your spice bag and place in the larger storage bag along with your veggies.

 On a small card or paper write down to make: Add all ingredients to 6 cups boiling water. Turn down to simmer and cook for 5-8 minutes longer.
While simmering you can add 1 can of chicken along with its juices it came with.

Serve this with crackers and there you go!!!!!

You can certainly make 100's of variations! Use Beef bullion cubes and add a can of shredded beef , add dried corn, dried cilantro and some chili seasoning to make a Tortilla soup! Garnish with tortilla chips!

Use Veggie bullion and just pack it with lots of veggies!
Add alphabet pasta!

The options are endless! Just use items you and your family like! Experiment with different grains and pastas as well! have fun with it!


Meanwhile, I've had some of my wheat boiling for "wheat berries" I will be making Tabbouleh for dinner tonight! I even picked fresh mint from our garden for this! I will take a few photos and share the recipe for this tomorrow!
