Hard Tack REAL survival food from the 1800's Civil War

HARD TACK

 Hard Tack was a staple for our military in the Civil War. It kept well and was a source of nourishment for those out in the field. In fact some sources say that you can keep hard tack for up to 50 years if kept in a air tight container and away from moisture.

Hard Tack is basically a cracker made with few ingredients and baked in a oven on a low heat. 
It was eaten alone or with homemade jam, maple syrup or butter or lard.
Not very appealing when put against our modern day crackers and breads!
BUT it would make a good staple in case of an emergency!

Today I'm about to make Hard Tack for our Survival weekend.
I usually make this and give it out to the children and the soldiers at the re enactments. 
I find it awesome to share the history behind it! And LOVE to see their reactions to this!

So, I wanted to share this recipe with you, you may want to make some for your Emergency preparedness pantry. It would also make a great project for your family if you incorporate some of the history behind it!

Hard Tack

3 cups of flour
2 cups of water
2 teaspoons salt

In a large mixing bowl add your ingredients, mix well with your hands. when your flour is wet, knead the mixture for about 3-4 minutes. Roll into about a half inch thickness and using a pizza cutter , cut into 3 by 3 squares. Lay out on cookie sheet and poke 4 rows of 4 holes in each cracker. Bake at 375 degrees for 30 minutes. Remove and turn crackers over, return to oven and bake for about 15 minutes more (or until golden brown) take out and cool completely.
Serve with jam, peanut butter, butter or eat as is!
Store in air tight container.

Survival Weekend, Giving it a "Test Drive"


Well, It's time to put what I "preach" to a practice run! This weekend Bill and I will be going to a Civil War re enactment for 3 days and will be taking a lot of our survival gear as well as some of our Emergency food kits we've put together! So, bringing the Dutch oven, fire starters, and a lot of dehydrated foods! No " In and Out" burgers, fish tacos or KFC! It's all or nothing this weekend!

I've already put a BIG soup mix together using my veggies I've dried! That's going to be a dinner! And tomorrow I'll be making "Hard tack". For any of you who do'nt know what that is ...It's like a big cracker! They made it in the 1800's for the soldiers. It was nutritious and could be kept for at least a year if kept dry. It's rather bland but does serve it's purpose! All it is, is flour, salt and water...Baked at a low heat for an hour or so, then turned over and baked some more!It also has something like 16 holes poked in it. I dont know why, maybe to cook it all the way!?

The only "Cheating" will be that there are real brick bathrooms! So, we still have that convenience! Although there arnt any shower facilities! We will be sleeping in a canvas tent, a replica of a Civil War era one. Ill make sure we take some pictures to show you our Weekend!

One of our "Hobbies" has been "Sutlers" at Civil War re enactments....We have a little business. It's an Emporium and we sell sundries and stuff. It's a lot of fun and you need to be in character, dressed as in the 1800's  oil lamps and so on!. So, since we already do something like living in the 1800's a few weekends a year, we feel this will help us be able to survive doing without1 Im hoping! LOL!

We've also have discussed doing a dry run at home and using our "washing kit" and cooking outside for a few weeks...Before winter.

Anyways, Wanted to just share this! I think it will prove to be interesting all the way around! So here's to this coming weekend! I will get on a few times before hand to share more recipes etc.

Please remember to put some water aside as well as a few canned items or other emergency "comfort" items! Just a few extra items every time you go grocery shopping can build your emergency food storage quite quickly!

A Simple White Sauce for Home Food Storage

I dont know about you, but I would totally miss things like Mac and Cheese, Gravy and biscuits and Anything yummy with a sauce! So, using the ingredients from my emergency food storage I was determined to come up with a basic sauce that could be used in a multitude of ways! This can be a base for a casserole if you dont have a can of cream of mushroom, chicken or celery soup.


In a small sauce pan melt a 1/2 teaspoon Crisco "butter" flavored shortening.
Add 1/2 cup of flour and stir. Get the flour mixed in with the shortening thoroughly.
Then gradually add liquid, a little at a time and stir until you get the consistency you want.
The liquid should be water and powdered milk. BUT if you desire a more richer flavor add a little chicken base to your liquid. So, about 1 cup of water, 1 tablespoon of powdered milk and a 1/4 teaspoon of chicken base.
Add white pepper and a pinch of salt to taste!

*Add 1 cup of dehydrated cheese and mix well. Stir in 4 cups cooked elbow macaroni and you have homemade Macaroni and cheese!

* Add Re hydrated TVP that has been seasoned with beef base, garlic and salt and pepper for a great "hamburger gravy" to serve over noodles or instant mashed potatoes!

* Add one can of tuna (drained) 1/2 cup dehydrated peas, 1/4 cup of dehydrated carrots and some onion to serve over egg noodles for a great tuna noodle dish!

**** The options are limitless!****

Homemade Stuffed Bell Pepper Casserole Dinner Kit for food storage

                                          Homemade Bell Pepper Casserole 
                                                     "Comfort Food"  kit for home storage!
Here's a great meal that you can prepare as a kit now and virtually put it together in a flash when needed!
I put the following components into 3 bags.


Bag#1:     2 cups dehydrated bell peppers
                1 cup dehydrated tomatoes
                1/4 cup dehydrated onion
                1/4 cup dehydrated celery
                1 cup of instant rice



Bag#2:     2 cups TVP
               1 tablespoon granulated garlic
               1/2 teaspoon black pepper
               1/4 teaspoon salt
               2 large beef bullion cubes (Keep foil paper on them until you are ready to use them)

Bag#3:  1 small can tomato paste
             1 small container (6-8 oz) dried parm cheese

Seal all your bags and put them together into a larger container. Label .

Write down the directions to put it together and include in container!


                                                Directions to prepare Bell Pepper Casserole

In a 10-12 inch dutch oven  pour all your ingredients  from bag #1.
Add 6 cups warm water and let sit for about 15 minutes. You want your veggies to re hydrate.

When your veggies have re hydrated. add the contents from bag#2. MAKE sure you remove the foil paper from the bullion cubes! Mix with a spoon and break up the bullion cubes. Place your dutch oven on the fire and bring to a slow boil. Add your tomato paste to this mixture and stir well. When your pot starts to bubble cover with lid and let cook stirring occasionally, for about 10 minutes. At the very end add your parm cheese on the top and serve! Will serve 6

TVP (textured Vegetable Protein) In Home food storage

                Textured Vegetable Protein is a wonderful addition to your emergency food pantry!
Textured or texturized vegetable protein (TVP), also known as textured soy protein (TSP), soy meat, or soya meat is a defattedsoy flour product; a by-product of extracting soybean oil. It is often used as a meat analogue or meat extender. It is quick to cook, with a protein content equal to that of meat.

TVP virtually has no flavor on its own and will pick up the seasoning and flavors of whatever it is cooked with. If used as a meat extender I will take on the meat juices and fats that are thrown off of the meat its cooked with. I realize that this in itself isnt to appetizing but I have to tell you this stuff is AMAZING! 

The shelf life is YEARS as long as it is stored  in an airtight container. It can be used as a meat replacement and  most people dont even realize that it isnt meat if not told when eating it in alot of recipes!

TVP is relativity inexpensive and can be purchased at most Large stores in their health food isles, Natural food stores and on line. It can be picked up pre packaged by the pound or bulk. I suggest you buy a small package and try it then purchase it in bulk! I just purchased a 20 pound bag and will be storing it in smaller bags myself. It was a little more than I had intended to pay (around $38 for 20 pounds) But I bought it through where i work. I have seen it cheaper on line! BUT I know it was still cheaper than buying 20 pounds of meat!

TVP can come in crumbles, flakes and other shapes but you will mainly see it like the above photo. It reminds me of kibble. When re-hydrated it has more of the consistency of ground meat.

TVP  can also come in a variety of flavors. Taco, Italian, sausage, ham, bacon, beef , chicken etc. I personally used the plain in cooking because I use it in so many different ways. That and because I have used this product for so long , they didnt really have the options they do now!

In the past I have used it regularly in my spaghetti sauce as a meat replacement, Made tacos, burritos and tostadas,  Casseroles and chili. TVP can be used in anything meat is used in!

My Ex husband ate it for years before I told him it wasn't meat! He was really surprised! He really couldnt tell !

I will be adding recipes for using this amazing stuff! Try it! You'll like it!

Asian rice balls EASY and FUN food storage recipe!

                                                        ASIAN RICE BALLS

Well, if you're like me I have quite a bit of rice put away in my emergency storage! Plain old rice dosent really do anything for me, so Ive come up with a few recipes to Pep it up a little! This first recipe is wonderful because it takes only a few ingredients, can be ate as a meal or served as a appetizer!!! AND very easy to prepare! It can be served hot or cold.

3 cups of cooked rice ( The stickier the better!)
1/4 cup soy sauce
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1/2 teaspoon dried parsley

Mix well in a large bowl. Make 1-2 inch balls using your hands. Set aside. 
In a bowl put about 1/2 cup of sesame seeds. You can use either plain or black. Roll each ball in the seeds until somewhat covered. Place balls on a platter. I put shredded cabbage down first for color! Serve with Soy sauce, Gyoza sauce or sweet and sour sauce. Also dont forget the wasabi! :)

Simple Dinner recipe for Food Storage! Thai Noodles!


                        Here's a GREAT and easy dinner using items from your food storage!




 
                               THAI PEANUT NOODLES
This is an easy and quick meal! And you can make it as hot as mild as you want! All the ingredients can come right out of your emergency food storage!

1 package of rice vermicelli,
(These can be found at your nearby Asian markets and are very inexpensive! Under a dollar!)
Place in a large bowl and cover with VERY hot water, let sit. There is no need to cook these! When noodles get soft, drain.

In a small sauce pan put the following ingredients:

1 cup chicken stock
1/2 cup peanut butter
1/2 teaspoon sugar
1/8 teaspoon garlic (Granulated)
1/8 teaspoon dried red chili flakes (more if you want to turn the "heat" up on it!)
pinch of salt

Heat all together, stirring until all is mixed. Serve over the rice noodles and garnish with peanuts and a sprig of cilantro!

Serve! Enjoy!

Simple Sunday...Taking a day of rest

Evening all!

I took the day off from my prepping, well not totally :)! I did have company today and was able to share with  my BFF and her husband the whole emergency preparedness basics and why we should do it. I think it really hit home for them to actually see what we have done so far in getting our household ready. Until it's in your face you really haven't a clue of what it really involves and the importance of it.

So, I hope that this is something they will continue to check into and start doing. I really feel that we as  human beings should reach out to all the people we know and get them to get the ball rolling .for them just a little basic education can go along ways!~ As you may know or maybe you're just starting out in your preparedness, it can be so overwhelming! That's why i started this blog in the first place....To help everyone who has an ear, to guide, educate and just plain share the ups and downs of pulling it all together! I don't think we can ever be totally prepared but I believe we can get a good start and at least survive!

Someone asked a question on face book the other day... "What is your passion?" I had to sit back and really think about it...Then it hit me! My passion is to share the knowledge I am collecting and helping others to well, basically survive! If we share this with the people we know and reach out and stand together there will be more people that will be able to survive most any crisis! Call me OCD...A fanatic...or just plain nuts...That's ok...at least I am passionate about helping not only my household but as many people I can reach! Isn't that what we are called to do in this life? To care for and help others?

LOL! Sorry! I'll step down from my soap box now! I hope this day was a restful one! Peace and Gods blessings to you and yours!

AND DON'T FORGET TO STORE SOME WATER!! We stored another 10 gallons today, not really a lot in the scheme of things but it is what it is!

A SMALL ALERT:
The "regular" stores where you may be able to buy camping related items are starting to almost phase them out. In speaking with a few places they said that people are just not camping and vacationing like in the past. So when they run out of things they pretty much dont re-order. MOST items CAN be purchased on line.
When Bill and I went to Walmart yesterday they had a Whopping 1 package of lantern mantles and were not expecting to get any more in any time soon! As time gets further into the Fall we will see things become harder to find. Be diligent in your preparing! Like , well.....Your life depends on it! Oh my! There I go again!!!! LOL!

Using your wheat, Tabbouleh recipe! YUMMY!!!

Here is the recipe I had promised for my favorite salad of all time!
Tabbouleh

This is a wonderful way to introduce wheat into your families diet. As time goes on I will be adding even more recipes for wheat.
The crisp fresh tastes of summer come through with fresh cucumber, tomatoes, mint and lemon.
You will find that even the pickiest of eaters will enjoy this salad!
It keeps well in your refrigerator and can be eaten as a side or a entree!
Will be a hit at your next party or BBQ too!

Super easy!~


In a large sauce pan bring 6 cups of water to a rolling boil. 
Add 3 cups hard wheat, red or white is fine, for this recipe I have used the hard white.
Bring to a boil again and cook stirring occasionally for about 25 minutes. Turn flame down , cover and  simmer for about 15 minutes. turn burner off and let sit , covered for about a half hour.
Drain all the water off and let cool.
In a large bowl put your wheat berries and the following ingredients:

1 cup quartered Persian  cucumbers (You can use regular cucumbers if you like) I like the persains because they are smaller and have less seeds.

1 quart of grape or cherry tomatoes , cut in half

1/2 cup of chopped fresh mint ( I use my scissors for this)

3 large garlic cloves, sliced thinly 

1 quarter cup of fresh lemon juice

1 quarter cup olive oil

1/4 teaspoon sea salt

Mix together and place in refrigerator covered.

let the flavors marry for at least an hour.

Serve! :)

Homemade Chicken Vegetable Soup Mix recipe for Food Storage!


Well here we go! Now that I have a stock of dehydrated veggies I can share with you a EASY and quick recipe using these little beauties Ive been drying all week! Keep in mind you can add whatever dehydrated vegetables you may have , as for me I like variety so ill be using these ingredients as well adding a few more!
As you can see from my photos I have zucchini, porta bella mushrooms, grated carrot, dried tomatoes and cabbage. Not pictured is the dried onion and garlic I will also be adding.

 My soup mix will feed a family of four . You will want to adjust your portions for the size of your family.

                                                          Chicken Vegetable and Rice soup

In a large size food storage bag put the following ingredients:

1/2 cup uncooked instant rice
1/4 cup   dried shredded carrots
1/4 cup dried zucchini
1/4 cup dried mushrooms
1/4 cup dried cabbage
1/4 cup dried tomatoes
1 TBS dried onion
1/2 teas  dried chopped garlic

In a small separate bag put your spices. This way if its kept apart there is less of a chance for spoilage ( Bullion cubes can turn rancid if not fresh and sealed properly)

Place 4 large chicken bullion cubes (keep in their wrappers until you use them) along with 2 Tablespoons dried parsley, 1/4 teaspoon black pepper. I wouldn't add any salt until after you've made your soup and then you can salt to taste. Bullion cubes hold a high salt content and you really don't want to over do it!
Seal your spice bag and place in the larger storage bag along with your veggies.

 On a small card or paper write down to make: Add all ingredients to 6 cups boiling water. Turn down to simmer and cook for 5-8 minutes longer.
While simmering you can add 1 can of chicken along with its juices it came with.

Serve this with crackers and there you go!!!!!

You can certainly make 100's of variations! Use Beef bullion cubes and add a can of shredded beef , add dried corn, dried cilantro and some chili seasoning to make a Tortilla soup! Garnish with tortilla chips!

Use Veggie bullion and just pack it with lots of veggies!
Add alphabet pasta!

The options are endless! Just use items you and your family like! Experiment with different grains and pastas as well! have fun with it!


Meanwhile, I've had some of my wheat boiling for "wheat berries" I will be making Tabbouleh for dinner tonight! I even picked fresh mint from our garden for this! I will take a few photos and share the recipe for this tomorrow!

Always HAPPY to help!

Last night our next door neighbors stopped by for a few....Apparently after I had stopped by their house to drop off a few jars of the jam i'd been canning and talked to her about getting prepared for an emergency. She had started talking to her husband about it. They were very serious about finding out more on what they could do to prepare themselves and their family. Fortunately for them (not necessarily for me!)  We still have our entire Emergency preparedness items filling our living room!

We were able to share info about items we have, items we will be purchasing soon and the different "Kits" we have put together! They were able to "sample" various dehydrated fruits and veggies I have as well as some beef jerky! They left here with a whole new outlook on emergency preparedness!

We even discussed how we might even be able to ban together to help each other in a time of crisis. If we each shared our thoughts with others as far as being prepared maybe we could save some lives! I know from experience that A LOT of people are in denial and think im a nut job, and well maybe i am! BUT I'll be the nut job with food and water! Things arnt getting better out there! Each new day brings more and more strange events.............Be diligent for YOUR survival! STORE AS MUCH WATER AS YOU POSSIBLY CAN! YOUR LIFE DEPENDS ON IT!

Homemade hot cereal recipe for storage!

I wanted to start sharing my recipes that I've come up with using the dried fruits and veggies Ive been dehydrating. I have seen dried cereal mixes online to purchase and decided I could make them better and way cheaper! That and I know exactly whats in them! This is soooooo super easy!

                                                        Quick Oatmeal with fruit

I have packaged this with my seal a meal to make single servings. And put it into air tight containers. This ended up costing me just pennies per serving! A hearty breakfast!

42 oz container of "quick oats"
(This will make 31  1/2 cup servings !)
Dried milk
Assorted dried fruit, in small pieces
sugar
Butter buds
salt
small food sealer bags ( I cut the regular ones down to make my small pouches)


Measurements for 1 pouch or "serving" of hot cereal mix

In a small pouch, about the size of a small envelope....pour in the following:

1/2 cup quick oats
1/8 cup dried fruit
2 tablespoons dried milk powder
1/4 teaspoon butter buds
pinch of salt
1 teaspoon sugar ( or more if you like it sweeter!)
carefully press out as much air as you can. seal and store in a air tight container. When labeling your container add that you will need to add 1 cup of boiling water to prepare.

There you go! Very economical! Yummy and easy!

MRE or To not MRE? That is the question!

Have you ever had a MRE? They are Meals ready to eat and are what our servicemen and women eat while in the field. I have had the opportunity to try several different ones during our "Survival preparedness field trip" the week before last.

Now, I wouldn't want to eat them on a regular basis but I must say they arnt bad at all! I have been a chef by trade for several years and I fancy myself to have a pretty discriminating pallet, even tho I do "indulge" in chicken mc nuggets every now and then! LOL! But I do recommend to you to stash a few of these in your survival pantry! If you purchase the whole meals they run about $8 and come with the "heater" to warm your food and they do work well!!! I have seen the items sold on line and they run about $2 per entree.Check out BEPREPARED.COM They have a variety of entrees, sides and desserts. Also these can be purchased at a ARMY surplus store.

I thought I would give a review of the ones that we had tried.

1.White chicken strips in salsa
Needed salt, would be great over rice!

2. White chicken with tomatoes and feta cheese
Lots of chicken, Great flavor! It was all of our favorite!

3.Chicken with pasta in pesto
Lots of chicken, the pesto was a little too much for me...AND I cant believe im even going to say this....BUT not enough pasta! Good flavor

4.Meat loaf in brown gravy and mashed potatoes.
we all liked it, reminded Bill and I of school cafeteria food! Potatoes were marginal

5.Beef patty in BBQ sauce
Really liked that!

6.Mexican Mac and Cheese
was really good and creamy!

7.Cornbread
DONT bother....In one word "ICKY!!!!"

8. Wheat bread snack
we all kinda liked it, it reminded us of "Hard Tack"

9.Vanilla Pound cake
good flavor but kind of crumbley

                  I think you should at least try a few of these. They are a little "pricey" to me but i think they are a nice addition to your food storage to break up canned, dried and dehydrated meals. These are made to last several years if stored in a dry cool place.

So, have a "tasting' party like we did! Buy a few and let everyone try them! See which ones you like or dont!  Then you will be able to purchase the right ones for you and your family! AND PLEASE let us know hat you think of the ones you get and give us your review on them!

Dont forget the pets in your family!

Good morning!

In the craziness of preparing for a crisis we may over look our pets!
make sure you prepare a pet emergency kit! They too will need water , food, meds and "comfort" items.

You will need to pack the following:

water
wet and dry food
flea powder
flea shampoo
extra flea collars
ear mite medicine
vitamins or supplements

This is a suggested list for cats and dogs



Of course if you have any other type of pet this will give you a basic list to tweek for your specific pet.

If you want to , you could actually make your own dehydrated pet food! Lighter and takes up less room than cans!

For cats and dogs:

Boil 1 whole chicken, cool all the way and de- bone it. use the giblets as well! Shred and put in your dehydrator.  Cooked chicken comes out very dry but re hydrates well! (You may want5 to cook a few for your pantry staples for meals!

 4 cups instant rice
1 cup dehydrated spinach
1 cup dehydrated shredded carrots
1 cup of dehydrated green peas
1/2 cup dry milk

Put all ingredients into a air tight container. Scoop out as needed into a small bowl and add 1 cup of water to every 1/2 scoop of Dehydrated food. Let set for about 15 minutes to re hydrate the  food mixture. Serve to the pet! This mixture will provide them with the protein and grains they need to stay healthy. At least 1-2 xs a month put a few drops of veggie oil in their food to help keep there coat and skin healthy! This can be mixed with kibble (dry food) as well to help stretch their food supply!

You can add fish to your cats food instead of the chicken if you would like, use canned tuna or salmon that has been packed in water, not oil! The oil will go bad quickly! SO you dont want to go through all of the preparation to have it become rancid! NOT A GOOD THING!

Build a Meal Plan!

Ok here I am again! Lets hope I don't lose this one today!

What I'm going to do is help you "Plan" your emergency food storage around the foods you and your family LIKE to eat!
Like I had mentioned in previous posts, if you stock up on stuff you and your family wont eat or things you haven't a clue how to use......WHAT"S THE POINT???? RIGHT?

So here's what I want you to do.... First you need to decide how long you plan to make your storage for, A week? A month? 6 months? A year????? Then I want to to sit down and write out at least 7 dinner meals and 7 breakfast meals that you and your family like and would normally eat on a regular basis.
NOW, get index cards and on the top write a meal on each card, So...you should have 7 dinner cards and 7 breakfast cards. Now, you dont have to just have 7 meals, but this is a good starting point and will help you plan and calculate what you will need to have stocked up for the meals.

EXAMPLE#1

Dinner #1     Spaghetti with meat sauce  ( This will be calculated for two adults. you will need to calculate for the size of your own family)

1 pound Spaghetti noodles ( make sure you figure what each item needs to be made and add it to your card)
1/2 gallon water
salt. teaspoon oil

1 can of spaghetti sauce with meat {Keep in mind you will probably not have access to fresh meat so plan accordingly)

Heat source

So, if youre planning on emergency food storage for 3 months (just an example) you may want to make your 7 dinners 12 times. So on the back of your card figure your shopping for this meal.

You will have the following on the back of your card:
12 pounds spag noodles
12 cans of spag sauce
1/2 cup salt
12 teaspoons oil
6 gallons of water

Then if you want to add extras like Parmesan cheese or bread sticks make sure to calculate these itms as well so they can be added to your shopping list later.

EXAMPLE#2

Chicken and rice ~ Green Beans~ Pineapple

Instant rice : 1/2 cup of rice per person and add exact same amount of water.
So, 1 cup instant rice
1 cup of water
pinch of salt

1- 8 ounce can of chicken
can opener!
1- 8 or 12  ounce can of cream of chicken soup

salt and pepper to taste.

heat source

1 can green beans
1 can of pineapple

Now calculate what you will need to make this dinner 12 times like above, and write it on back of your card.

12 cups instant rice
12 cups water
about 2-3 teaspoons salt
12 cans chicken
12 cans cream of chicken soup
about 1-2 teaspoon pepper
12 cans of green beans
12 cans of pineapple

After you have finished your 7 dinners and 7 breakfasts  make your shopping list based on the back of your cards! This will save you money and time! You'll also have a better idea what you will need to add to your list to supplement your meals! make sure to add desserts and snacks! You will need "comfort" foods, during a time of crisis this will bring you some sort of normality and comfort no matter how small!

What I think will be a real bummer to me is the possibility to not have fresh veggies! I LOVE SALADS! So, I have invested in a home sprouter kit and seeds! This way I will get something fresh and green! That and home canning and dehydrating gives you a better handle of things that may not be available like asparagus. I dehydrated 4 pounds to use for a side dish or soup. it was cheap and shrunk down to almost nothing! But upon re- hydrating it it turned out beautiful and just as tasty!

I hope that this helps you feel a little less overwhelmed! It's something very doable!

YOU dont have to start out prepping for a whole year! Start small and add to it! Be prayerful and ask for guidance! Thats what I do anytime I start to work on being prepared!

AND PLEASE! SAVE WATER NOW!!!!! You can use any and all plastic food grade/safe bottles you get other things in from the store! Just make sure you wash them VERY well before adding your water! You can also add plain unscented bleach to it to keep it safe. From what I understand , the drinking water we get out of our faucets in our home has enough chlorine to hold it. BUT you cant be too prepared!!!!! These can be stored in closets, cupboards and even under your bed!

LOL! that came to me when i was feeling a little lazy and didn't 'FEEL" like cutting up veggies for the dehydrator today! Then it hit me....If I dont take the few minutes I have now to cut these up and then I may end up throwing them all away somewhere down the line. i'd be kicking myself when I'm sitting there in a crisis without those things!!! SO, my goal is to become a "Proberbs 31"Woman...Because my efforts now will provide for my family later!

Hello everyone!

Well it's been a flurry of dried veggies, jerky and mylar bags here the last couple of days!
Ive dried Jalapenos (enough for a lifetime im afraid!), Garlic, cilantro, turkey, beef jerky and starting tomatoes, cabbage, onions, asparagus, celery and zucchini! Also canning corn salsa!!!!
Just wish it was cooler here! It says its 90 outside and must be over a hundred in the house!

Bill and I have been packing all out food storage items in plastic crates and buckets. We also started our emergency pet bucket.  Found 4 packs of canned friskies for 99 cents at the 99 cent store today! Good score I think! Sorry about the font change! have NO clue what I have done! OR how to change it back over!!!!!

Some other good deals we found the last few days were a 12 pack of 3 hour Sterno at smart and final for $11! And at our local thrift shop I found a Coleman 2 mantel propane lantern in a case for $7! A large enamel canning pot with lid for $7!  2 enamel ware coffee cups and bowls for only $2! AND a extra large cast iron fry pan with a lid for $6!!!! Now to label everything and take inventory! I know what we still need as far as the big purchases, still have little things to fill in!

OH!~ At smart and final they have packages of  several different kinds of pastas for ONLY 29 cents a bag! You cant beat that! There's only the two of us and we dont eat a lot of past normally so the smaller bags makes sense! It would feed 4.

Keep in mind to buy things YOU like and will eat! No sense in hoarding large amounts of stuff you will never use! We happen to like soups, so we found wonderful complete soup mixes at big lots for $3 a bag. These are hearty and have meat. I'm also putting together my own soup mixes using the dehydrated meats and veggies i'm drying. I'm adding the spices in a small bag within the mylar package so all Ill need to do is add the whole thing to boiling water. All your food storage should be rotated! So keep a log of the expiration dates with your inventory. I LOVE the dehydrator!!! It's so much easier to pack the smaller items as well as the bags! Mylar bags can be used with  your food  saver/ sealer. Also dont forget the little packets that keep your food dry and last longer!

Tip of the day! Well maybe a few!!!

Greetings all!

I wanted to talk about wheat. Wheat is a must in your pantry. As I'm sure you are aware of, the corn crop here in the US for this year has almost been completely destroyed. With the intense drought and floods these past few months we will see a huge spike in grain prices! Not to mention our food prices will shoot up!

This is the time to purchase your grain supply! You will want to stock up on dried corn, red wheat, white wheat and oats. These are major players in your "Survival pantry"! Not only will you need grains but you will also need a grain mill. These can be purchased on line... Make sure you get a hand mill, this can be used for nuts and coffee beans as well.

Wheat will keep well for a really long time if kept dry, sealed and out of the direct sun. Wheat has a 30 year life. You need it to make flour and can also eaten as a main course.

You can make "Thermos berries" that are very easy to make and be eaten as a breakfast, lunch or dinner! It basically depends on what you put with them! Here's a recipe!

You first will need a quart thermos. Put 1 cup of dried wheat (Either white or red) into the thermos. Then add boiling water , about 2 cups. Like with rice, you add double the amount of water to your wheat. Place lid on it and let stand over night. The wheat swells from the water and are called "Wheat berries".

breakfast berries:
You can add sugar and cinnamon, butter and milk and eat as a cereal.
or add concentrated fruit juice for a special treat!
Mixed with a little dehydrated onion and dehydrated ham or sausage would make a super hearty breakfast!!!

Dinner berries: These can be used just as you would use rice or any cooked grain. The red wheat is a more hearty wheat with a bit of a stronger taste. The white wheat is less intense.

Stir  fry the berries with a little olive oil, add carrots, onions, spinach, mushrooms, broccoli. Stir fry until vegetables are tender. Add garlic salt, pepper and soy sauce to taste. You can add meat or fish to this as well, whatever your preference

Wheat berries can be cooked in a crock pot and stored in the refrigerator in a sealed container for a week.
If you arnt used to eating wheat like this or any grain, you may want to play around with it and add it as a filler until your family gets used to it!

In the Greek culture they make a salad called Tabbouleh. Using the wheat berries they add olive oil, lemon juice , fresh mint,garlic, diced cucumbers and tomatoes. Its wonderful!!!!!This is served cold.

So I HIGHLY recommend gathering your grain supply ASAP! There are many great web sites that carry grains by the can or the bucket!


The next tip I want to share is make sure to stock shortening! With shortening you can bake, fry and make homemade tortillas! For me shortening has always been a problem..
 #1. I don't use it up fast enough and it always goes rancid! No matter what I do it just doesn't seem to last for me.That and i just dont use it! BUT, You need it to make tortillas, some breads, baking cookies...Frying meats...REMEMBER, this will keep for you during dire times! Here's all you have to do! Buy a can of shortening and some pint canning jars and lids! Being VERY careful, heat your shortening in a pot until melted, DO NOT OVER HEAT!!!!!! Then carefully pour into clean pint jars and seal in a water bath. This will seal your jars and shortening and it will last you years until its opened! Another great thing is they do have powdered shortening available.

And last but least my last tip for today......
When baking something calls for an egg, you can use Knox unflavored gelatin as a egg replacement. I DO NOT recommend using it as a egg replacement in anything other than baking! So, make sure to pick up a few boxes to keep on hand!

BUT I thought I would share a awesome tip tonight!

How to make an emergency cook stove

These are so very easy and economical!!!! They will burn for about 1 and a half hours. It wouldn't hurt if you were to have a few of these on hand, also would be great to barter with! I will share two kinds that I found out about.

#1
  1 quart size NEW metal paint can with lid.( These can be purchased at your local hardware store)
  1 roll of toilet paper , remove cardboard tube
  1 bottle of rubbing alcohol , must be 70%

remove tube from toilet paper and squeeze into paint can. When wanting to use this as a emergency cook stove pour the rubbing alcohol over the toilet paper and light. This can will be stable enough to place a small to medium sauce pan on it. The lid it comes with is good to put it out.

#2
1 empty large tuna can
newspaper
1 bottle of rubbing alcohol (70%)

Same as above , but using the newspaper instead of the toilet paper. Stuff the newspaper tightly into the can and then pour the alcohol over it. Light.


REMEMBER.....The MOST important items that are MUST haves dont have to be expensive!

WATER
FOOD
HEAT/COOKING

Greetings Friends!

We just got in and I cant wait to share all the wonderful info I got on my "Preparedness Field trip"!!!! But back to the reality of it all...I need to prepare for tomorrow, work ya know! LOL!
